Instructions
Preheat smoker to 107°C and toss several wood chunks on top of hot coals.
Mix seasoning, salt, and pepper into the ground brisket, divide into equal portions, and form into burger patties.
Place burgers on the hot grates and cook until the internal temperature reaches 60-65°C. This usually takes 30-45 minutes. Start preheating the grill to 260°C after 25 minutes.
After the burgers reach the target temperature, remove form the smoker and brush both sides with barbeque sauce.
Transfer to the grill and sear for 2 minutes then flip and sear for 1 minute.
Place cheese slices on each burger until melted.
Assemble brisket burgers onto buns and add your chosen toppings.
