35gKansas Kick spice rub(or Memphis Red if you don't want the heat)
120gmayonnaise or vegan mayo
30gprepared chilli sauce
15graw honey
0.5juice of lime
3gprepared hot sauce
30mlextra virgin olive oil
Instructions
Preheat the BBQ on high.
Shuck your corn and trim the widest end so it is flat.
Stand your corn on the flat, wide end on a cutting board and slice it vertically through the ear's middle.
Slice the two pieces of corn in half. You will have four ribs per ear of corn. Set corn aside and prepare the other ingredients.
Melt butter and mix with Big Dog Spice of your choice.
Liberally brush the seasoned butter on the corn ribs.
Add olive oil to BBQ and grill for 8 minutes, then rotate and grill for 6 minutes. The corn will be lightly charred, and the ends will curl to mimic the shape of a rib.
While you cook the corn, prepare the mayo sauce by mixing all ingredients together. If you prefer, serve with whipped butter. Remove grilled corn ribs to a platter and sprinkle with the garnish of your choice.
Notes
Good optional garnishes include sliced jalapenos, cilantro, cotija cheese (or grana padano), and scallions.
Mayonnaise can also be replaced with chilli mayo if you want some extra spice.
