Instructions
Preheat smoker to 107°C and toss several wood chunks on top of hot coals.
Mix seasoning, salt, and pepper into the ground brisket, divide into equal portions, and form into burger patties.
Place burgers on the hot grates and cook until the internal temperature reaches 60-65°C. This usually takes 30-45 minutes. Start preheating the grill to 260°C after 25 minutes.
After the burgers reach the target temperature, remove form the smoker and brush both sides with barbeque sauce.
Transfer to the grill and sear for 2 minutes then flip and sear for 1 minute.
Place cheese slices on each burger until melted.
Assemble brisket burgers onto buns and add your chosen toppings.
Notes
My kitchen test found the smokey taste of these mouthwatering beef brisket burgers was delicious enough to stand alone.
You can get freshly ground beef brisket from any good butcher shop. However, if you have brisket trimmings, grind through your meat grinder’s coarse setting and finish with a finer setting.
Grilling bacon for the burgers is a fantastic way to add an extra layer of flavour to your creations.
I also like to grill peppers and onions to make a nice topping.
Pro tip: To prevent sticking, clean your grill grates and brush with oil before adding your burgers.
