A crowd-pleasing classic that is incredibly easy to make
50gMemphis Red spice rub(or a mix of smoked paprika, salt, garlic powder, black pepper, cayenne pepper, oregano onion powder, and a bit of sugar)
BBQ sauce
Instructions
Season approximately 1.4 kilograms of chicken thighs with the Memphis Red rub or a mix of smoked paprika, salt, garlic powder, black pepper, cayenne pepper, oregano onion powder, and a bit of sugar.
Grill the chicken until it reaches an internal temperature of 74°C, then remove it from the grill.
Chop the chicken up into bite-sized pieces.
Place sliders on a cutting surface and carefully cut them in half, keeping your knuckles on the counter as you cut to ensure even slicing.
Assemble the bottom half of the sliders in an aluminium foil pan and layer each slider with American cheese, chopped chicken, and 2 tbsp green onion.
Place the top of the buns back on and brush on melted butter.
Place the sliders on the grill or in an oven and cook at 163°C for 20 minutes until the cheese melts.
Remove the buns from the pan, then slice up the sliders and serve hot.
Serve the sliders with BBQ sauce on the side for dipping or drizzling according to taste.
With its bold, balanced mix of earthy, savoury, and sweet flavours, Memphis Red spice rub is my favourite spice for this recipe. But you know I love to experiment!
I like to switch it up now and then and I’ve found that Kansas Kick and Coat of Arms also complement the flavours and ingredients in this BBQ chicken sliders recipe well. If you try any of our other spices and rubs with this recipe, I’d love to hear how it turns out!
